Baked Eggs with Chicken Sausage & Feta
- 4 links of chicken sausage I used a spicy flavor
- 1 jar tomato sauce homemade or store-bought
- 1/4 cup feta cheese
- 6 large eggs
- Kosher salt and fresh cracked black pepper to taste
- Chopped cilantro for topping
Preheat oven to 350 degrees.
In a cast iron skillet (or a sauté pan that can be placed into the oven--no rubber handles!) on medium heat, brown the sausage. Add the tomato sauce and season with salt and pepper (Optional: you can also season with paprika and cayenne to give it some heat!).
When the sauce is hot, use a spoon to make small pockets to crack the eggs into. Space them out so you can fit all the eggs. Top with about half of the feta cheese (save the rest for serving).
Place the skillet in the oven and bake until the whites of the eggs are set, about 10-15 minutes.
Top with the rest of the feta and cilantro.
I like to have a good piece of bread (or garlic bread) on the side to dip into!
