Have you ever tried marinated your chicken with beer? Because ohhh maaaan does it make for some tender, juicy chicken! This recipe also has some major flavor to boot starting with chipotle peppers and adobo sauce. Check it out!
What was my inspiration for this dish? Well, I’m a self-proclaimed lover of Chipotle. And I wanted to make chicken similar but even better.. and I did that by creating an amazing blend of spices and ingredients and adding BEER to help tenderize the meat in the marinating process.
Please do yourself a major favor and 1) marinate this chicken overnight for extra tenderness and flavor AND 2) make double the batch so you can freeze the second half and thank me later!
This chicken is perfect for tacos, burritos, quesadillas, or my favorite.. a burrito bowl! Or just with some veggies and brown rice on the size for health 🙂
Ingredients
- 2 pounds boneless skinless chicken thighs
Marinade
- 1/2 cup beer
- 1/2 medium sweet onion chopped
- 2 cloves garlic
- 1 chipotle chili pepper in adobo sauce
- 3 tablespoons canola oil divided
- 2 tablespoons freshly squeezed lime juice
- 1 tablespoon adobo sauce
- 2 teaspoons chili powder
- 1 teaspoon paprika
- 1 1/2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Instructions

Place chicken in a large ziplock bag and set aside.

Add all marinade ingredients to a blender and blend on high until well combined. Pour the marinade into the ziplock bag with the chicken and make sure it gets into all the nooks and crannies!

Transfer to the refrigerator for at least 4 hours, but preferably overnight for 24 hours. You can also freeze it!

To cook the chicken, heat a grill pan on high heat. Once hot, add chicken and cook for about 7 minutes on each side.
