Another perfect Thanksgiving side dish! Spice up your regular corn with this Bacon & Corn hash with onions, scallions and a little kick of spice!
Corn & Bacon Hash
Ingredients
- 6 ears of fresh corn
- 2 russet potatoes cubed
- 1/2 large yellow onion diced
- 5-6 strips thick cut bacon
- 4 stalks scallions sliced finely
- 1/4 teaspoon paprika
- 1/8 teaspoon cayenne pepper
- Kosher salt & black pepper to taste
Instructions

Slice corn off the cob. In a cast iron skillet (or large sauté pan), add bacon and cook until browned. Remove and place on a bed of paper towels to soak up the extra grease.

In the same pan, add potatoes and season with paprika and cayenne pepper. Cook for about 5-6 minutes on medium-low heat. Add in onions and cook until translucent.

Finally, add in the corn and scallions and salt and pepper to taste (about 2 large pinches of salt an 1 of pepper) on medium-high heat for just a 1-2 minutes until corn is cooked. Add the bacon back in to heat it up and serve!
