The best part about this recipe, besides it being deliciously dairy free, is that it doesn’t require you to bake it so you can enjoy it even sooner!
The basis for this recipe comes from the vegan cheese sauce, which is the same sauce I use in my vegan mac and cheese. You just add a little water over heat and boom… dairy free nacho cheese sauce! Here is another recipe you can use with the cheese sauce as well since you’ll have extra: Crunchwrap Supreme!
Ingredients
- 1/2 pound ground beef
- 1/2 packet taco seasoning 0.65 ounces or 1 1/3 tablespoons
- 1/2 cup vegan cheese sauce see notes section for recipe
- 1/4 cup water
- 4 handfuls tortilla chips use gluten free for a GF recipe
- 1 tomato chopped
- 1 jalapeno pepper sliced thin, seeds removed
- 1/2 cup dairy free sour cream
- cilantro chopped
Optional additions
- 1/4 cup red onion diced
- 1/2 avocado cubed
Instructions
-
Heat a non stick saute pan on medium-high heat. Add ground beef and using a wooden spoon, break up the meat into small pieces while it cooks. Once it's been browned, drain the excess grease and then add in the taco seasoning and stir until well combined.
-
Place tortilla chips into a large plate, skillet, or whatever dish you want to use to serve. Spoon the ground beef over the tortilla chips.
-
Add vegan cheese sauce and water to a small saute pan and mix until well combined and hot. Pour over tortilla chips and meat.
-
Top with tomatoes, jalapeno slices, and sour cream. Sprinkle some chopped cilantro and enjoy!
