
I was craving waffles but also wanted to keep them as healthy (but tasty) as possible so I came up with this recipe and needed to share!
Shout out to my brother for getting me an awesome waffle maker for the holidays! Finally putting it to use….great use!

Dairy Free Waffles
Ingredients
- 2.5 bananas
- 1 cup almond milk
- 1 3/4 cups buckwheat flower
- 1 egg
- 3 tablespoons coconut oil
- 3 tablespoons agave syrup
- 3 tablespoons pure vanilla extract
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1 pinch kosher or sea salt
Toppings:
- Sweetened shredded coconut
- Blackberries
- Raspberries
- Organic light corn syrup
- Bananas sliced optional
Instructions

Melt the coconut oil in the microwave or on low heat on the stovetop and let it cool down.

Place bananas and almond milk in a blender and blend until combined. Add the rest of the ingredients and blend until there are no clumps.

Heat your waffle iron. Spray with non stick oil or brush on vegetable oil. Read the instructions for your iron on how much batter to use. Tip: If you want the edges to look like mine, use a bit less than the instructions tell you. Cook for approximately 3-5 minutes or until nicely browned on the outside. With each batch, re-spray the waffle iron with oil.

Top with fresh fruit, coconut and syrup and enjoy!
