Promise to be better than your average BEC… that’s bacon and egg and cheese for those who needed a little help there 😉

Egg, Bacon & Avocado Breakfast Sandwich
Servings 4
Ingredients
- 8 strips thick cut bacon
- 2 ripe avocados sliced
- About 1/2 tablespoon butter
- 4 large eggs
- 4 rolls of bread I used challah
- Mayonnaise
- Sriracha
To make spicy mayo:
- Mix about 1 part Sriracha to about 3 parts mayonnaise the darker the color the spicier it will be so test it out before you serve! You can always add more mayo back in to make it less spicy
Instructions

In a sauté pan cook bacon (work in batches if they all don't fit) and place on paper towels to remove excess grease.

In a clean sauté pan, add butter and crack the eggs into the pan. See my post on how to make the perfect fried egg!

Assemble avocados, bacon and top with egg. Lastly, drizzle spicy mayo on top.
