Roasted Garlic, Spinach & Goat Cheese Frittata
Ingredients
- 12 large eggs
- 1 head garlic
- 1/3 cup goat cheese crumbled
- 4 cups fresh spinach
- 1 tablespoon vegetable oil

Frittata

Preheat oven to 250 degrees.

Heat oil in a sauté pan and add spinach. When spinach begins to wilt remove and set aside.

Crack eggs into a mixing bowl and whisk well. Add eggs to cast iron pan (or an oven safe pan).

Place spinach and goat cheese in the pan and place pan into the oven. After about 8 minutes place garlic evenly across the top.

Cook about 15-18 minutes or until eggs are set.

Tip: the more you whisk your eggs and introduce air into them, the fluffier your eggs will be!
