Anyone else bored of their typical meal prep? I sure was! But then there came this salad with all the right ingredients. Little kick from the banana peppers, fresh lemon and herb flavor on the chicken, juicy sweetness from the cherry tomatoes and the saltiness
I had the pleasure of trying out Taylor Farm’s salad kits, the Greek Chopped kit in particular, and it inspired me to create this recipe that I’m personally so proud of because I’m pretty particular about salads and I absolutely devoured this (for three days straight!).
Ingredients
- 2 chicken breasts
- 1 lemon sliced
- kosher salt
- fresh cracked black pepper
- dried oregano
- 2 packages Taylor Farms Greek Chopped Salad Kit
- 1/4 cup banana peppers chopped
- 1 cup cucumbers chopped into 1/4-inch pieces
- 1 cup cherry tomatoes sliced in half
Instructions

Preheat oven to 350 degrees.

Line a baking sheet with aluminum foil. Place chicken breasts on lined baking sheet. Season liberally with salt, pepper and oregano. Place lemon slices on top of the chicken and bake for 30-35 minutes.

Heat a grill pan on high heat. Remove lemon slices from chicken and sear each side of the chicken breasts until a grill mark forms, about 2 minutes per side. Set aside and let cool.

In the meantime, remove the contents of the Taylor Farms Greek Chopped Kit. Place the greens in a large bowl or platter and top with the packet of olives. Top with banana peppers, cucumbers and cherry tomatoes.

Slice chicken (or cube it to your desired size) and top. Dress salad and enjoy!

The kit also comes with chopped pita chips, top those as well for a little crunch!
