Paprika Roasted Potatoes
- About 2-3 pounds yellow potatoes
- Extra virgin olive oil
- Cayenne pepper
- Kosher salt
- Freshly cracked black pepper
Preheat oven to 350 degrees.
Slice potatoes and assemble in a large baking dish my placing them slightly on top of each other in rows (see photo for reference). Drizzle liberally with olive oil and cover with paprika, season with salt and pepper and add a touch of cayenne pepper. Add another row on top so that the potatoes are staggered (i.e., not directly on top but off to the side of the row below) and repeat topping with olive oil and seasonings.
Cover with aluminum foil and bake for 20 minutes. Then remove the aluminum foil and bake for another 5 minutes to get a little crispiness!
Then...try not to eat them all in one sitting!
