Let me start by saying you can use any type of quinoa you want and top it with any ground meat…which also is great for making different versions of this dish and not getting sick of it! For this one, I used a multicolored quinoa and ground chicken. Ground turkey or beef would also be great! Other options would be sliced grilled chicken or steak.
Quinoa Burrito Bowl
Ingredients
- 1 cup quinoa
- 2 cups water
- 1 teaspoon extra virgin olive oil
- 1 pound ground meat chicken, turkey, beef
- 1 packet taco seasoning
- 1/2 cup water
- 4 to matoes diced
- 1 small red onion diced
- Juice from 1 lime
- About 1/4 cup of cilantro chopped
- Salt and pepper to taste

Instructions

Combine diced tomatoes, onion, lime juice, cilantro and season with salt and pepper (Optional: you can also add avocado). Set aside.

Place quinoa, water and olive oil in a medium pot and bring to a boil, then simmer for about 20 minutes or until all the water is absorbed and the quinoa has sprouted and set aside.

In a medium-large sauté pan, cook ground meat and chop using a wooden spoon or spatula until broken down into small pieces. Add taco seasoning and 1/2 cup of water and bring to a boil then let simmer until sauce thickens.

Assemble quinoa in a bowl and top with the ground meat, salsa and avocado sauce! I added some hot sauce on mine too...
