So simple. So delicious. If this isn’t your new go-to easy lunch or appetizer then I give up.. (not really, but I did personally eat 3 of these back to back).
I loooove making roasted cherry tomatoes they just get insanely flavorful when they start to blister and are just so juicy and delicious! Placing them on top of some crispy toast with goat cheese is just sheer perfection!
- roasted cherry tomatoes see notes for recipe!
- 6 slices good quality bread
- 8 ounce goat cheese softened
- olive oil
- kosher salt
- fresh cracked black pepper
- fresh basil
Make roasted tomatoes by following my recipe here for Roasted Cherry Tomatoes
Preheat oven to 400 degrees
On a baking sheet, place slices of bread. Drizzle them with olive oil and season with salt and pepper. Bake until lightly browned about 5-8 minutes
Let toasts cool slightly, then spread goat cheese on each toast and top with the roasted cherry tomatoes.
Top with fresh basil
