I’m finally sharing one of my go-to recipes that I always have the ingredients on hand to make! What’s required? Eggs + sliced cheese + tortilla + chicken sausage + mayo + sriracha. And if I don’t have sausage, I’ll just make it meat-less!
The key to making this breakfast burrito restaurant quality is crisping both sides so its nice and golden brown and crispy! Also, I use dairy-free cheese in mine and highly recommend only using Follow Your Heart brand (either the American or Smoked Gouda style). In my opinion, they are the best in terms of taste, texture and melty-ness (not sponsored, just a friendly tip!).
Ingredients
- 1 burrito sized flour tortilla
- 2 slices American cheese I used dairy-free American (Follow Your Heart brand)
- 1 large sausage link I used an Italian spicy chicken sausage
- 2 eggs, scrambled
- 1 pinch kosher salt
- 1 pinch fresh cracked black pepper
- 1 pinch garlic powder
- 1 pinch oregano
Spicy Mayo
- 1 tablespoon mayonnaise Use either Hellmann's or Kewpie
- 1 teaspoon sriracha
Instructions

Make the spicy mayo by mixing the mayonnaise and sriracha and set aside.

Place your tortilla on a plate or cutting board and lay the two slices of cheese in the middle and about 2 inches away from either end (leaving room to wrap it at the end).

Heat a non-stick pan to medium-high heat. Cut the sausage into 4 slices, lengthwise and place on the pan. Cook on each side for at least 2-3 minutes or until it begins to brown nicely. Remove and place on top of the cheese in the tortilla.

Spray some oil (I used avocado) onto a non-stick pan and heat on medium. Wait about 1 minute before adding your scrambled eggs. Season with salt, pepper, garlic powder, and oregano. Use a wooden spoon or rubber spatula to move the eggs around until they are just cooked. Transfer to the tortilla, on top of the sausage.

Spread the spicy mayo on top of the eggs and then carefully wrap the burrito by first enclosing it on one side, then the other, and then fold the top and bottom.

Using a medium to large sized non-stick pan, heat on medium. Wait about 1 minute, spray with oil, and place burrito so that the folded side is down first. Cover the pan with a top and cook for about 2 minutes per side or until golden brown. Slice in half and enjoy!
