This recipe is actually inspired by an old menu item that I used to order all the time from Lenwich sandwich shops that they no longer sell (sadly) so I decided to recreate it at home and I’m so happy I did!
I love that this sandwich packs a ton of veggies yet it doesn’t feel like you’re eating all of them because the spicy tuna is so flavorful that it balances out all the layers of healthy veggies! Oh, and did I mention yet that the tuna salad itself is packed with veggies? I blend roasted peppers and carrots into the tuna as well!
Ingredients
- sliced bread of your choice I used a whole grain
Spicy Tuna Salad
- 3 5 oz cans tuna 15 oz total
- 1/3 cup mayonnaise
- 2 tablespoons sriracha
- 1/4 cup roasted red pepper
- 1 carrot, cubed
- 1 stalk scallion
- 1 pinch salt
Suggested toppings
- 1/2 ripe avocado, sliced thin
- 1/2 tomato, sliced thin
- lettuce I used bibb lettuce
- cucumber, thinly sliced lengthwise
- grated carrot
- thinly sliced red onion
Instructions

Drain the tuna and add to a food processor. Add in the rest of the ingredients to the food processor and blend until well combined. Add more mayonnaise if need be. Taste and add more sriracha if you prefer it spicier!

Optional: Toast your bread slices and let it cool before assembling your sandwich.

Evenly spread about 1/4 of the tuna salad on one piece of bread. Layer on top of the tuna the veggies of your choice (one, some, or all of my suggested toppings!).

Slice in half with a large, sharp knife and enjoy!
