Chocolate Mousse

Ingredients

  • 1/2 cup heavy cream
  • 4 large egg yolks
  • 3 tablespoons sugar divided: 2 tablespoons + 1 tablespoon
  • 1/8 teaspoon kosher salt
  • 4 ounces semisweet chocolate chips or chopped
  • 1 scoop Detox Organics*
  • 4 large egg whites

For whipped cream:

  • 1/2 cup heavy whipping cream
  • 1 tablespoon confectioners sugar or regular sugar if you don't have!
  • 1/2 teaspoon vanilla extract

Optional toppings:

  • Fresh raspberries

Instructions

  1.  Using an electric mixer, beat heavy cream in a bowl until stiff peaks form; cover and chill.

  2.  In a large metal bowl, combine egg yolks, salt and 2 tablespoons sugar. Place the bowl over a saucepan with simmering water (without letting the bowl touch the water). Whisk constantly, cooking for about one minute until the mixture has doubled in volume and lighter in color.

  3.  Remove bowl from the saucepan and add in the chocolate and Detox Organics, stirring until melted and fully combined.

  4.  Using a clean, dry metal bowl, beat egg whites with an electric mixer on medium speed until foamy. While still mixing, gradually beat in the remaining 1 tablespoon of sugar. Increasing the speed to high, beat until firm peaks form. Fold the egg whites gently into the chocolate mixture in two-parts. Add in the chilled, whipped cream.

  5.  Transfer the mousse into ramekins and chill for at least 2 hours or until firm.

*you can substitute 2 additional ounces of semi-sweet chocolate for the Detox Organics
