Banana Pancakes

Ingredients

  • 3 ripe bananas
  • 6 eggs
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon freshly grated nutmeg Tip: you can use regular nutmeg but freshly grated will really make these stand out!
  • Optional topping: fresh sliced bananas & maple syrup

Instructions

  1.  Peel the bananas and using the back of a fork or a potato masher, mash up the bananas until there's no bumps. Then, add the eggs and mix until combined. Lastly, add in the cinnamon and nutmeg

  2.  Using a griddle pan or a large non-stick saute pan, heat on medium-high heat and then spray with some PAM or vegetable oil. Pour the batter onto the pan--the size of the pancakes are up to you--for about 1-2 minutes on each side, checking that the bottom does not burn.

Recipe Notes

Tip: You will likely need to adjust the heat occasionally so it doesn't get too hot after the first batch. In between batches, I removed my pan from the heat until I was ready to pour the next batch to keep the pan from getting too hot! Top with maple syrup and some fresh bananas and enjoy these easy to make banana pancakes!
