Corn & Bacon Hash

Ingredients

  • 6 ears of fresh corn
  • 2 russet potatoes cubed
  • 1/2 large yellow onion diced
  • 5-6 strips thick cut bacon
  • 4 stalks scallions sliced finely
  • 1/4 teaspoon paprika
  • 1/8 teaspoon cayenne pepper
  • Kosher salt & black pepper to taste

Instructions

  1. Slice corn off the cob. In a cast iron skillet (or large sauté pan), add bacon and cook until browned. Remove and place on a bed of paper towels to soak up the extra grease.

  2.  In the same pan, add potatoes and season with paprika and cayenne pepper. Cook for about 5-6 minutes on medium-low heat. Add in onions and cook until translucent.

  3.  Finally, add in the corn and scallions and salt and pepper to taste (about 2 large pinches of salt an 1 of pepper) on medium-high heat for just a 1-2 minutes until corn is cooked. Add the bacon back in to heat it up and serve!
