Pumpkin Creme Brûlée

Ingredients

  • 2 cups heavy cream
  • 3 egg yolks
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar
  • 1/4 cup pumpkin puree
  • 1/8 teaspoon freshly grated nutmeg
  • 1/8 teaspoon cinnamon
  • 8 cups warm water

Instructions

  1.  Preheat oven to 325 degrees.

  2.  In a small sauce pan combine cream, vanilla extract, nutmeg and cinnamon and heat on medium heat until it boils. Remove from heat, cover and let sit for 15-20 minutes (this allows the flavors to combine).

  3.  In a mixing bowl, whisk egg yolks and sugar until combined (it will turn a lighter yellow color).

  4. Continue to whisk while slowly add cream mixture to the eggs and sugar.

  5. Pour mixture into ramekins. Place ramekins in a casserole dish/Pyrex and add warm water so it comes up halfway of the ramekins.

  6.  Bake for 40-45 minutes. Remove from oven and carefully remove ramekins from the dish and wrap with plastic wrap (be careful not to have the plastic wrap touch the top of the mixture inside the ramekins). Let chill for at least 2 hours in the fridge.

  7.  Place a layer of sugar evenly on top and using a blow torch, brown the sugar.
