In a small bowl, mix together soy sauce, sesame oil and hoisin sauce.
Cut spam into 1/2 inch cubes. Heat a non-stick pan on medium high heat and add in spam. Let each side brown about 2 minutes per side. When all sides are browned, add in soy sauce mixture and stir for about 30 seconds. Transfer to a bowl and set aside.
Add canola oil to pan. Add in chopped garlic and stir until fragrant (about 30 seconds to 1 minute). Add in cooked rice and stir until garlic is well distributed. Make a hole in the center of the rice to expose the pan. Add in the beaten egg into the hole and stir until it's cooked.
Add back in the SPAM and mix until everything is combined.
Remove from heat and garnish with scallions.
Add some more canola oil to the pan--enough to fully coat the bottom of your pan. Once hot, add the sliced garlic. Once it begins to brown remove and place on a paper towel to remove excess oil. Add to the top of your rice!
I like to add a little ketchup at the end :)
