Ingredients

  • 2 pounds boneless skinless chicken thighs

Marinade

  • 1/2 cup beer
  • 1/2 medium sweet onion chopped
  • 2 cloves garlic
  • 1 chipotle chili pepper in adobo sauce
  • 3 tablespoons canola oil divided
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon adobo sauce
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Place chicken in a large ziplock bag and set aside.

  2. Add all marinade ingredients to a blender and blend on high until well combined. Pour the marinade into the ziplock bag with the chicken and make sure it gets into all the nooks and crannies!

  3. Transfer to the refrigerator for at least 4 hours, but preferably overnight for 24 hours. You can also freeze it!

  4. To cook the chicken, heat a grill pan on high heat. Once hot, add chicken and cook for about 7 minutes on each side.
