Chia Seed Pudding

Ingredients

  • 1 cup almond milk
  • 1 teaspoon agave
  • 2 teaspoons vanilla extract
  • 4 tablespoons chia seeds
  • Optional toppings:
  • Fresh blueberries
  • 1 kiwi peeled and sliced

Instructions

  1. In a mason jar or tupperware mix the almond milk, agave and vanilla extract. Then add in the chia seeds and give that a mix. Put the lid on your container and leave for at least 2 hours in the fridge or overnight.

  2. Once the chia seeds have expanded, give it a nice stir and then you can top with any fruit you’d like. I took a small mason jar and added a layer of blueberries, then took a few slices of the kiwi and placed them around the jar and filled in the middle with the pudding and then again topped with more blueberries and the remaining kiwi. This is mostly for presentation purposes so if you’re not trying to impress anyone then just throw it all in a bowl and enjoy!
