Quinoa Burrito Bowl

Servings 4


  • 1 cup quinoa
  • 2 cups water
  • 1 teaspoon extra virgin olive oil
  • 1 pound ground meat chicken, turkey, beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 4 to matoes diced
  • 1 small red onion diced
  • Juice from 1 lime
  • About 1/4 cup of cilantro chopped
  • Salt and pepper to taste

  1. Combine diced tomatoes, onion, lime juice, cilantro and season with salt and pepper (Optional: you can also add avocado). Set aside.

  2.  Place quinoa, water and olive oil in a medium pot and bring to a boil, then simmer for about 20 minutes or until all the water is absorbed and the quinoa has sprouted and set aside.

  3.  In a medium-large sauté pan, cook ground meat and chop using a wooden spoon or spatula until broken down into small pieces. Add taco seasoning and 1/2 cup of water and bring to a boil then let simmer until sauce thickens.

  4.  Assemble quinoa in a bowl and top with the ground meat, salsa and avocado sauce! I added some hot sauce on mine too...
