Preheat oven to 350 degrees.
Peel the sweet potatoes. Cut them to your desired thickness. I used my mandolin on the thinnest setting to get these thin crispier ones but these are also delicious if you cut them about 1/4 inch and make a great side dish to any meal.
Line a baking sheet with aluminum foil and arrange the sweet potato rounds. Drizzle with olive oil and season with salt and pepper.
For the thin slices, cook for about 5-7 minutes. For thicker slices 8-12 minutes, or until you can easily poke a fork through the center.
