My favorite meal of the day... BRUNCH! Frittatas are a brunch staple and so cost effective! Here's how to make this roasted garlic, spinach and goat cheese frittata...
-10 to 12 large eggs
-Roasted garlic (see recipe here)
-Spinach, 4-5 cups uncooked
-1 tablespoon of vegetable oil
Step 1. Preheat oven to 250 degrees.
Step 2. Heat oil in a sauté pan and add spinach. When spinach begins to wilt remove and set aside.
Step 3. Crack eggs into a mixing bowl and whisk well.
Tip: the more you whisk your eggs and introduce air into them, the fluffier your eggs will be!
Step 4. Add eggs to cast iron pan (or any ALL METAL pan that can be placed into an oven).
Step 5. Place spinach and goat cheese in the pan and place pan into the oven. After about 8 minutes place garlic evenly across the top.
Step 6. Cook about 15-18 minutes or until eggs are set.
