Ingredients

  • 1 1/4 cup almond flour
  • 2 tablespoons honey or agave
  • 1/2 cup salted peanut butter if unsalted, add 1/4 teaspoon kosher salt
  • 1/4 teaspoon vanilla extract
  • 1/4 cup cacao powder
  • 4 tablespoons cocoa nibs
  • 4 tablespoons shredded coconut unsweetened

Instructions

  1. Mix all ingredients together in a small mixing bowl. I like to use a fork for this!

  2. Using a medium cookie scoop, make about 12 balls and roll them with your hands. Store them in a tupperware in the fridge. I recommend waiting at least 1 hour for them to chill before enjoying (and enjoy up to a week)!
