I wanted to make a chocolate version of my go-to chocolate chip oatmeal cookie balls that I love having in the fridge for a quick snack to tide me over to my next meal, so here it is!

Refrigerator time 1 hour
Servings 12 cookie balls
- 1 1/4 cup almond flour
- 2 tablespoons honey or agave
- 1/2 cup salted peanut butter if unsalted, add 1/4 teaspoon kosher salt
- 1/4 teaspoon vanilla extract
- 1/4 cup cacao powder
- 4 tablespoons cocoa nibs
- 4 tablespoons shredded coconut unsweetened
Mix all ingredients together in a small mixing bowl. I like to use a fork for this!
Using a medium cookie scoop, make about 12 balls and roll them with your hands. Store them in a tupperware in the fridge. I recommend waiting at least 1 hour for them to chill before enjoying (and enjoy up to a week)!
