I think this might be my new favorite recipe! I’ve already made them three times in one month!
I absolutely love this recipe and it’s so, SO easy to make that as soon as you do it once you’ll be making these all the time. They’re really that good! And there’s no butter, raw egg or traditional sugar that usually goes into cookie dough so they’re much healthier!
It’s easy to make these gluten free and vegan–just make sure your oats are gluten free and the chocolate chips are vegan.
Oatmeal Chocolate Chip Balls
- 1/2 cup cashew butter
- 2 tablespoons agave
- 1/2 heaping cup almond flour
- 1/2 cup rolled oats
- 1/4 teaspoon kosher salt only use if your cashew butter is unsalted!
- 1/2 teaspoon vanilla extract
- 1/3 cup chocolate chips
Step 1. In a medium sized mixing bowl, combine cashew butter and agave. Next, mix in the almond flour, oats, salt (see note), vanilla, and chocolate chips.
Step 2. Roll the dough into about 10-12 balls. I like to keep them in a plastic tupperware container lined with parchment paper in the refrigerator. Enjoy for up to two weeks!
