
I’m dub this simple sandwich, “The Jersey” because 1) New Jersey tomatoes are the absolute best and 2) they are so good they can be the star of a sandwich!
My mom grew up eating this.. and to be TOTALLY honest I thought it was gross until I grew up and so did my taste buds and I can fully appreciate the deliciousness of getting a juicy, ripe tomato and slathering it with good mayonnaise (don’t even try anything other than Hellman’s PAHLEASE) salt and pepper. Because that’s all that’s in this juicy goodness.
To do this sandwich justice don’t just buy any tomatoes. Don’t even try to make this sandwich with some whack tomatoes from your local weird grocery store. Go to a farmer’s market if you have access. If not, try a grocery store that sells organic and quality produce. I could go on and on about how run of the mill grocery stores sell the worst tasting produce ever but I’ll spare you. Just find a good tomato 🙂
Ingredients
- 1 tomato see the beginning of this blog post for my notes on what I mean by a "tomato" here
- 4 slices white sandwich bread, toasted
- Hellman's mayonnaise I live by Hellmans and that's not an advertisement.. it's just my holy grail of mayo
- Kosher salt
- Fresh cracked black pepper
Instructions

This recipe barely needs instructions. Wash your tomato, slice into about 1/4 inch slices.

Add mayo to each side of your toasted bread (the amount is up to you.. but err on the side of MORE!)

Top with a few slices of tomato and season liberally with salt and pepper. Cover, slice, and enjoy!
