Cheesy is in quotes because this is dairy-free roasted broccoli but I add my secret ingredient to mimic that cheese flavor.. read more to find out what it is 🙂
I’ll cut right to the chase… it’s nutritional yeast that has that nutty, cheesy flavor that I love to use when I’m trying to get that cheesy flavor. I’ve used it for my vegan mac and cheese sauce and as a substitute for Parmesan cheese in my vegan pesto sauce! This recipe can’t get any easier.. just chop, season, bake, sprinkle and serve…
Ingredients
- 1 large head broccoli
- 2 tablespoons extra virgin olive oil
- 1/4 teaspoon kosher salt
- 1/8 teaspoon black pepper
- 1/8 teaspoon garlic powder
- nutritional yeast
Instructions
-
Preheat oven to 425 degrees
-
Cut broccoli into small florets. Place in a bowl and add in olive oil, salt, pepper and garlic powder. Toss until well combined.
-
Cook for about about 15-20 minutes. I've read a lot of recipes that say cook 25 minutes at 450 and WOW did that make some black broccoli which can be attributed to 1) your oven and 2) how small/large you cut your broccoli so just keep an eye on them starting around 15 minutes!
-
When cooked through and starting to brown slightly, liberally sprinkle the nutritional yeast on top and enjoy!
