One of my absolute favorite meals to make for breakfast (or lunch…or dinner!)
I love making meals in my cast iron skillet…and this is one of my favorites!
Skillet Hash Browns and Eggs
Ingredients
- 2 russet potatoes cubed
- 4 eggs
- 2 chicken sausage cubed
- 1/2 white onion medium diced
- 1-2 scallion stalks finely chopped
- 1 teaspoon paprika
- 1 pinch cayenne pepper
- kosher salt to taste
- fresh cracked black pepper to taste
Instructions

Preheat oven to 350 degrees.

On the stovetop, add potatoes to the skillet on low-medium heat. Season with paprika, cayenne pepper, salt and black pepper.

When the potatoes are almost cooked all the way add the sausage and onions.

Once the onions are soft and the sausage has a light brown crisp, crack the eggs on top of the hash.

Place the entire skillet in the oven for about 5-7 minutes or until the egg whites are cooked.

Sprinkle scallions on top with some more black pepper.
