If you’ve never had caramelized bananas before OH MY does it bring out the flavor of the bananas and make them sweeter! And I’ve figured out how to do it with just two ingredients and a bit healthier by using coconut oil and maple syrup!
I could eat this every day and it only takes as little as 6-10 minutes to cook them and you can make the oatmeal while they’re cooking. I used oat milk to cook the rolled oats which just makes so much sense… but of course, you can substitute regular milk or another non-dairy milk like almond or cashew milk, for example.
Ingredients
Oatmeal
- 1/2 cup rolled oats
- 1 cup oat milk or other milk/dairy-free milk
- 1 tablespoon maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1 pinch kosher salt
Caramelized bananas
- 1 banana sliced
- 1 tablespoon coconut oil
- 2 tablespoons maple syrup
Optional toppings
- 1 tablespoon cashew butter or other nut butter
- 1 tablespoon dairy-free chocolate chips
Instructions

Add rolled oats and oat milk to a small pot and bring to a boil. Once boiling, lower heat and let simmer. Stir occasionally.

In the meantime, add coconut oil and maple syrup to a medium-large sized saute pan. Once bubbling, add in bananas. Cook for 3-5 minutes on each side or until nice and golden brown.

When the oats begin to thicken, add in the maple syrup, vanilla extract, cinnamon, and salt and stir until well combined.

Transfer oatmeal to a bowl, top with the bananas and optional toppings and enjoy!
