
I am savoring every last bit of grilling weather we have left with these amazing lamb skewers with homemade tzatziki sauce! I’m using quality Grass-Fed New Zealand lamb steaks from Silver Fern Farms which are great for the grill!

Ingredients
Tzatziki Sauce
- 1 cucumber grated
- 1 1/2 cups Greek yogurt I used Kite Hill's Unsweetened Greek Yogurt for dairy-free and vegan recipe!
- 1 tablespoon lemon juice
- Zest from 1/2 lemon
- 1 tablespoon extra virgin olive oil
- 1 tablespoon white vinegar
- 1 tablespoon chopped fresh dill
- 1 medium garlic clove grated
- 1/2 teaspoon kosher or sea salt
Lamb Skewers
- 2 8 oz packages of 4 Silver Fern Farm Lamb Steaks
- 2 green peppers
- 2 medium red onions
- cooking oil I used avocado oil
Optional
- Pita bread
- Roasted cherry tomatoes see instructions
Instructions
Tzatziki Sauce

Take grated cucumber and squeeze excess liquid using hands first and then wrap in a paper towel and remove even more liquid. Place in a small bowl and add in all other ingredients. Mix until combined and then place in the fridge until ready to serve.
Lamb Skewers

Cut lamb steaks into 1-inch cubes. Slice peppers and onions into 1-inch squares. To make your skewers, start with one piece of lamb, one pepper, and one onion and repeat two more times, ending with one last piece of lamb.

Heat a grill or grill pan on high and lightly spray your skewers with a cooking oil (I used avocado oil). Once hot, add skewers making sure not to overcrowd your pan (work on batches if need be). Cook for 3 minutes on one side, flip and cook for another 3 minutes.

Remove from grill and enjoy with your tzatziki sauce!

Roasted cherry tomatoes: drizzle tomatoes with olive oil, salt and pepper in a baking dish or cast iron pan and roast in the oven at 375 degrees F for 35-45 minutes.
